Bought some Tapioca pearls at Woodmans Market today, so I’m taking notes for bubble tea.
By the way, Woodman’s Food Market is one of the best grocery stores you’ll ever experience. A true melting pot of food and culture at a reduced price. Gas is cheap and car washes are only three bucks. You can buy disgusting foreign soft drinks with grass jelly or tamarind paste in them to gross out your friends. Or, how about buying and snacking on a fancy tin of spotted dick? Yummay… No eel to be found though…
Anyway, this drink looks like a pain in the a$z to prepare, but it’s well worth the taste, texture, and coolness of it all. Drink it on your porch. Impress the kids in the neighborhood.
Pearl Milk Bubble Tea
1 tbsp bubble tea syrup
3/4 cup bubble tea base
2 tbsp whole milk
1 cup ice
3 to 4 tbsp cooked Tapioca Pearls
Put tea, creamy ingredient and bubble tea sugar syrup in shaker and mix well. Add in ice, cover shaker and shake for a nice froth. Add tapioca pearls to the glass, and pour in your drink. A big, thick, clear straw allows the ‘bubbles’ to bubble up to your mouth in a dazzling display.

Bubble Tea Syrup
1/4 cup white sugar
1/4 cup brown sugar
1/2 cups water
Mix sugar and water in a large pot. Cook at medium to high heat until it boils. Set aside to cool.
Tapioca Pearls
1/4 cup large black or white tapioca pearls
2 1/2 cups water
Bring the cooking water to a vigorous boil in a large pot. Stir in the tapioca pearls slowly, so they do not stick together or sink into a clump. As soon as they float, boil covered for about 20-30 minutes. Stir three times during cooking.
Turn the heat off and let the tapioca sit in the water for 25 minutes. Stir three times during soaking. Rinse the pearls in tap water until the water runs clear. Lighly coat with bubble tea syrup.
Bubble Tea Base
4 cups water
2 oz tea by weight (any tea)
Mix water and tea. Cover, cook at medium heat. Boil 8 minutes. Strain and let cool.
