How do you prepare ribs for the grill? You microwave them first. Microwaving any raw meat sounds disgusting for some reason. But it works. My butcher taught me, and you should always trust your butcher.

Country Style Ribs

3 lbs country style ribs on or off the bone, I don’t care
2 tbsp chili powder
2 tbsp brown sugar
4 tsp kosher salt
1 tbsp ground cumin
1 bottle of good barbeque sauce. We really like Captain Curt’s *the blue bottle.

Combine spices. Put the ribs into a large microwave safe bowl or pyrex container. “Rub” spices into the ribs and let them sit out in the kitchen at room temperature for an hour. Preheat your CHARCOAL grill if you have one.

Cover the ribs with a paper towel and microwave on high for 7 mintues. Take the ribs out and flip them around. Microwave them on high for another 7 minutes. Turn again. Microwave in 5 minute increments until the meat is no longer pink. Meat on the bone will take about 20 minutes of microwaving.

Place the ribs on the grill and char them up over direct heat, about 10 minutes per side. Move the ribs to the side of the grill away from the direct heat and cook 20-30 mintues longer, turning once. Remove the ribs and pour the sauce over them. Cover them with aluminum foil and allow them to rest for 20 mintues.
