Tastes just like a Milwaukee favorite! Is it authentic chili – it’s allegedly written down by an employee and hastily scribbled onto a 3×5 card. I have a copy of that card before me. This chili is simple to make. The original called for unsweetened chocolate, but it’s way too bitter. I think that part was a mistake, any bitter chocolate should do. Needed some acid – I also added the vinegar to this recipe.
Chili
2 lbs ground chuck
1 onion, diced fine
1 oz semi sweet chocolate
1 tbsp chili powder
1 tbsp ground cumin
1.5 tsp garlic powder
1 tsp salt
1 tsp red pepper
1/2 tsp ground pepper
4 cups beef stock
1 tbsp vinegar
onion diced coarse
shredded medium cheddar cheese
sour cream
oyster crackers
cooked spaghetti noodles
Over medium heat brown the ground chuck with the onions. Drain all but 1 tbsp of the grease from the pan. Add all the spices and stir to combine, about 1 minute. Add the water and vinegar, and simmer on low heat at least 1/2 hour – preferably 2 hours.
Serve over spaghetti noodles and top with onion, cheese, oyster crackers and sour cream.
