1 lb celery stalks
1 tsp salt
4 tsp sugar
3 tbsp dark sesame oil
1 tbsp soy sauce
2 tsp rice vinegar
1 garlic clove, minced
1 teaspoon chili oil, optional
Cut the celery into 2-inch pieces. Mix with the salt and 1 tsp of the sugar and set aside for 10 minutes. Rinse and dry the celery, then toss with the dressing. Marinate for at least 3 hours. Serve cold.
