
Hen and Lou and Char
1 lb ground lamb
1 lb ground chuck
1 whole pita bread, pulsed fine in food processor
4 cloves garlic, minced
4 tbsp dried parsley
2 tsp salt
1/2 tsp ground black pepper
1/2 tsp ground fenugreek seed
1/2 tsp ground cumin seed
1/4 tsp ground tumeric
2 eggs
Mix together spices, garlic, and eggs. Stir in ground pita bread. Add meat and blend together well. Allow to rest in your refrigerator at least 2 hours.
Preheat broiler. Form meat into large patties. Broil for 10 minutes, turning once until done. Cut into slices and re-broil for 3 minutes if extra crispiness is desired.
