
Cedarburg Train Depot in the snow
1 tsp canola oil
2 cloves minced garlic
1/2 teaspoon chili paste
2.5 cups chicken stock
2 tbsp fresh lime juice
1 tbsp fish sauce
1 tbsp tamarind paste
1 tbsp sugar
1/2 cup pineapple cubes
1/2 cup broccoli stems and tops cubed
16 raw medium shelled shrimp (thawed or frozen)
fresh basil or cilantro
chopped peanuts
bean sprouts
low mein noodles
Fry chili paste and garlic in oil for 1 minute over medium heat. Add stock and stir to combine. Bring to boil and then reduce to simmer. Add lime juice, tamarind paste, fish sauce and sugar. Stir to combine. Add broccoli, pineapple and shrimp. Cover and simmer until shrimp are cooked through, about 3-5 minutes.
Add noodles to a bowl, top with bean sprouts. Add hot soup and top with peanuts and chopped cilantro.
