Spinach Feta Turkey Burgers

Somewhat healthy and very tasty grilled, these burgers hold up well to freezing.  I like to freeze patties in a freezer safe bag.  Before freezing I place the burgers on waxed paper sprayed with a little bit of non-stick cooking spray.

Spinach + Feta + Turkey Burgers

1 lb ground turkey
1 box of frozen spinach (8-10 oz)
1/4 pound feta cheese
1/4 tsp oregano
1/2 tsp parsley
1/2 tsp kosher salt

Cut feta into 1/4 inch pieces and set aside.

Microwave spinach according to package instructions.  Usually this means microwaving covered in a microwave safe dish for 4 mintues on high.  Allow spinach to cool slightly and the drain into a clean dish towel.  Wring the dish towel tightly to remove as much moisture as possible.  You should end up with a tight ball of dryish spinach.

Flake the spinach ball into small pieces and put them into a medium size mixing bowl.  Mix in oregano, salt, and parsley.  Add turkey and mix until combined.  Now, add the cubed feta cheese and gently mix everything until the cheese chunks are well distributed.

Form the mixture into patties and grill at least 4 minutes per side over a medium hot grill until done.  Makes about 5 good sized patties.
