A superior way to start the day and end the day, this granola not only tastes good, but challenges the gut with plenty of nuts, seeds, and hard grains. There’s two sets of ingredients. Set 1 needs a longer baking time, Set 2 is added just before finishing things up. Each set has some recommended optional additions, throw in whatever you think would taste good.
Ingredient Set 1:
3 cups thick rolled oats
1 cup raw walnut pieces
1/3 cup canola oil
1/3 cup 100% maple syrup
1/4 cup raw pumpkin seeds
1/4 cup raw sesame seeds
1 tsp kosher salt
1/4 tsp cinnamon
1/2 tsp nutmeg
Optional Additions for Set 1:
1/2 cup unsweetened shredded coconut
1/2 cup barley or wheat berries. (Soak in boiling water until semi-soft and drain.)
1/4 cup raw flax seeds
1/4 cup raw sunflower seeds
Ingredient Set 2:
1 cup dried cherries. If the cherries are sweetened, soak them for 10 minutes in hot water and drain.
Optional Additions for Set 2:
1/2 cup banana chips, chopped
1/2 cup dried apricots
1/2 cup raisins
Assembly
Preheat oven to 325 deg. Mix Set 1 ingredients together in a bowl and spread into a baking dish. Bake for 40 minutes, stirring every 10 minutes or so. Once the granola is beginning to brown, add the Set 2 ingredients and bake for 10 minutes more. Allow to cool and store in an airtight container.
